3/4 cup quinoa (dry)
1 1/2 cups water
8 oz chicken breast
1 tsp oregano
1/2 tsp garlic powder
Salt and pepper
1 Persian cucumber, diced
1 cup cherry tomatoes, halved
8 kalamata olives, halved
1/4 red onion, thinly sliced
2 tbsp crumbled feta
Dressing: 1/4 cup Greek yogurt, juice of 1 lemon, 1 tsp dill, 1 clove garlic (minced), salt
Istruzioni
Cook quinoa in water. Fluff with a fork.
Season chicken with greek yogurt, oregano, lemon, paprika, garlic , salt, and pepper. Grill or pan-sear 5–6 minutes per side. Rest 5 minutes, then slice.
Whisk dressing ingredients together.
Divide quinoa between bowls. Top with chicken, cucumber, tomatoes, olives, and red onion.
Crumble 1 tbsp feta per bowl. Drizzle with dressing.
