Gingerbread Coffee Cake

Ingredienti

1/2 cup unsalted butter; melted

1/3 cup molasses

2 eggs

1 tbsp vanilla extract

1/2 cup plain whole milk yogurt

3/4 cup white sugar

3/4 dark brown sugar

2 1/2 cups all-purpose flour

1 tsp baking soda

1 tsp baking powder

1/2 salt

1 tsp cinnamon

1/2 tsp nutmeg

1/2 tsp allspice

3 tsp ginger

Streusel:

1 cup dark brown sugar

1 cup all-purpose flour

1 tsp cinnamon

Pinch of salt

7 tbsp of unsalted butter; softened

Brown butter glaze:

1 cup powdered sugar

3 tbsp whole milk

1 tsp vanilla extract

Pinch of salt

1/4 cup unsalted butter; browned

Istruzioni

Start by browning your butter over medium-high heat until you’re left with a foamy golden butter; set aside to cool.

In a large bowl, combine all of your wet ingredients along with the brown and white sugar; mix until smooth.

Add the dry ingredients to the wet mixture and fold in until everything is well combined. Set aside for 30 minutes to allow the flour to hydrate while you work on the streusel.

For Streusel:

In a small bowl, combine the streusel ingredients and work the butter in until you’re left with coarse crumbs.

Assemble:

Grease and line an 8x8 pan; add half of your batter and top with a generous layer of streusel; add the remaining half of your batter and finish off with another layer of streusel.

Bake at 375F for 45-60 minutes; while that bakes, work on the glaze.

For Glaze:

In a small bowl, combine the glaze ingredients and mix until smooth; once the coffee cake is done baking, drizzle the glaze and enjoy!
