Lemon Garlic Butter Chicken & Green Beans

Ingredienti

  • 7 to 8 boneless skinless chicken thighs

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp paprika

  • 1 tsp oregano

  • salt and pepper to your taste (try 1 tsp salt and 1/2 tsp black pepper)

  • 5 slices of bacon- cut into bits

  • 2 Tbs butter (use 1 Tbs to cook chicken and 1 Tbs to cook veggies)

  • 1 lb green beans

  • 1 medium onion, minced

  • 4 cloves of garlic, minced

  • 3/4 cups chicken broth

  • 1 Tbs hot sauce

  • 1/4 tsp lemon zest juice from half lemon (about 1 Tbs lemon juice)

  • handful chopped parsley

  • 1 Tbs honey

Istruzioni

1. Mix seasonings together & place ½ on each side of the chicken. Cover with wrap & set aside

2. Cook bacon bits until crisp, drain & set aside keeping bacon fat in pan

3. Add 1 tbsp butter to deglaze pan, then cook chicken about 5-6min per side until browned outside and cooked within. Remove chicken, cover and keep warm.

4. Add 1 tbsp butter to deglaze pan again, then cook beans with onion- season with salt/pepper to taste. About 5 minutes to soften beans and caramelize onions, then add garlic and stir for 30s. Then add chicken stock, siracha, lemon zest & juice. Cook covered on medium heat for another 5 min.

5. Add honey and most bacon bits, toss beans and move to the side of the pan. Add back chicken pieces along with and juice from chicken and warm chicken over lower heat for a few minutes.

6. Garnish with remaining bacon bits & parsley.
