Arroz Caldo:
1kg bone-in chicken thighs
1 cup glutinous rice (malagkit)
1 cup regular white rice
1 onion, chopped
10-12 garlic cloves, minced
1 whole ginger, julienned
Chicken oil (optional)
6-8 cups chicken stock (or until pot is filled)
2 tbsp fish sauce (or to taste)
Salt and pepper, to taste
1 tbsp of kasubha
Toppings:
Hard-boiled eggs
Fried garlic bits
Spring onions
Istruzioni
Start by searing your chicken thighs in neutral oil (or in this case we used chicken oil) for about 3-5 minutes on each side. Remove chicken and place on a wire rack. Set aside for later.
In the same pan or pot add your chopped onions, garlic and ginger and saute using the excess oil until softened and fragrant.
Add your rice and chicken stock and mix. Add back your chicken thighs and season with fish sauce, kasubha, and pepper. Cover your pot which should be on a gentle simmer for about 25-35 minutes or until the rice is cooked.
Serve with spring onions, eggs, and crispy garlic bits and enjoy!
