Ingredienti

2 cucumbers (1 half moons, 1 julienned)

2 tomatoes, diced

1 onion, 1 spring onion

Cilantro, dill

1 ½ water, 2 tbsp sugar, 4 tbsp soy sauce, 1 tbsp garlic, 5 tbsp vinegar, salt, pepper

200g beef stir-fry, 1 tbsp sesame oil

3 eggs, veg oil

1 tbsp sugar, 1–2 tbsp vinegar, 1 tbsp soy sauce (for veggies)

Paprika, ½ tbsp gochugaru

6 tbsp olive oil, MSG (opt)

Somyeon noodles, sesame seeds

Istruzioni

Veggies: Slice 1 cucumber (half moons), julienne another. Dice tomatoes, slice onion, chop spring onion, cilantro, and dill. Shred carrots.

Broth: Mix 1.5L water with 2 tbsp sugar, 4 tbsp soy sauce, 1 tbsp garlic, tomatoes, cucumbers, dill, 5 tbsp vinegar, salt, pepper and let it Chill.

Salt veggies: Salt cabbage, julienned cucumber, carrots in separate bowls. Let sit.

Marinate beef: Mix with 2 tbsp soy sauce, 1 tbsp garlic, 1 tbsp sesame oil.

Egg slices: Whisk 3 eggs with salt, oil. Make a thin omelet, roll and slice.

Flavor veggies: Add to each: 1 tbsp sugar, 1–2 tbsp vinegar, 1 tbsp soy sauce, paprika, gochugaru, cilantro, dill, tomato, pepper. Brown garlic and onion in 6 tbsp olive oil and pour over. Mix by hand after cooling.

Cook beef: Add beef to pan with salt, MSG, onions, garlic. Cook till brown.

Noodles: Boil somyeon, rinse in ice water, drain.

Assemble: Noodles first, then salted cucumber, cabbage, egg, herbs, carrots, fresh cucumber, tomatoes, beef. Sprinkle sesame seeds and pour chilled broth.
