Chicken Bacon Ranch Baked Potato

1 cup cheese
2 spring onions
1/2 c heavy cream
1/4 c milk
2 TBS ranch powder
3 TBS butter
4 small/medium potato’s or 2 large potato’s
Drizzle of Olive oil
Kosher Salt (not table salt)
4 slices bacon
1 rotisserie chicken breast
Istruzioni
Bake the potato’s
- wash potato’s and stab 3 times with a fork all the way through. 
- rub potato’s with olive oil and kosher salt 
- Bake at 425°f for 45-60 minutes or until fork tender 
- pull out and cut in half lengthways to help cool completely 
Air fry the bacon
- Add a bit of water to the bottom to prevent smoking 
- Put bacon in air fryer at 375°f for 14 minutes or until done 
- Put off to the side to cool 
Combine
- slice bacon lengthways then into bite size pieces 
- dice the greens of spring onions and the chicken breast 
- Remove baked potato’s innards from the skin, discard skin from potato and crumble the potato leaving bite size chunks 
- combine bacon, greens, chicken and potato 
The sauce
- combine melted butter, heavy cream, milk, and ranch powder then dump on potato mixture and mix 
Baking
- pour contents into an 8x8 casserole pan then top with cheese. 
- bake at 350° until inside reaches 165°f then broil to crispen cheese 
Note
Freezes really well, no change to recipe
I like topping with sour cream
