welcome to Christmas from around the world, a series where I’ll be showing you how different cultures celebrate Christmas around the world.

today is part 1 and were taking a trip to Ethiopia to make some Doro Wat. A fiery onion and chicken stew, full recipe below!

4 tbsp ghee (clarified butter)

20 red onions

5/6 tbsp of berbere spice mix (recipe below)

2 tbsp ghee/niter kibbeh

3 tbsp garlic & ginger paste

1 tbsp black pepper

1 lime cut into quarters

Salt

2 chicken thighs skinless

2 drumsticks skinless

6 hard boiled eggs

Berbere spice mix:

10 red dried chill’s

2 tbsp black peppercorns

1 tbsp cumin seeds

3 green cardamon pods

1 tbsp coriander seeds

4 tbsp smoked paprika

1 tsp ground turmeric

1 tsp nutmeg

1 tsp cinnamon

To serve:

Start by slicing 20 red onions into small pieces or if you have a food processor, lightly pulse until the onions into smaller pieces. Heat up a large stew pot on a medium low heat, then add to a large stewing pot, cover and cook for at least 45 mins to an hour until they have softened and have turned a lovely dark colour, as seen in the video.

In the meantime, make your berbere by toasting the chilli, peppercorns, cumin seeds, cardamon pods and coriander seeds until fragrant but not burnt. Then add to a spice blender with the rest of the spices and blend until smooth, then set aside. Soak your chicken in water, juice from the limes and some salt for 5 minutes

Once your onions have almost broken down and look a dark purple colour (as seen in video), add a few tbsp extra of ghee, then cook for a further 5 minutes. Now add your berbere mix and mix very well. Then add your garlic and ginger paste alongside the clarified butter (ghee) or niter kibbeh, if using. Cook for 2 minutes.

Now strain the water from the chicken, pat with a paper towel, ensuring the chicken is dry, then add to the stew pot. Cook for 40 mins until tender and cooked through. Right at the end, add some hard boiled eggs, and season generously with salt to taste. Serve with some injera and enjoy!
