No-Bake Energy Bites

1 cup rolled oats
½ cup miniature semisweet chocolate chips (optional)
½ cup ground flax seed
½ cup peanut butter (crunchy or smooth)
1/6 cup honey (can sub some for molasses)
1 teaspoon vanilla extract
Istruzioni
Stir oats, chocolate chips, flax seed, peanut butter, honey, and vanilla extract together in a bowl. Or put through a food processor for a smoother product.
Roll dough into 24 balls with your hands. Arrange balls on a baking sheet and freeze until set, about 1 hour.
Note
I make this as a double batch and only use 1/3c sweetener (original recipe called for 1/3c for a single batch). I mostly use honey, but sub some for high-iron molasses, and it's still quite sweet. Only go back to the original if you want to turn this into a dessert!
