2 ripe bananas, mashed (about 240 g / 1 cup)

120 g (1/2 cup) plain Greek yogurt

60 ml (1/4 cup) honey or maple syrup

2 large eggs, room temperature

5 ml (1 tsp) vanilla extract

120 g (1 1/4 cups) oat flour

30 g (1 scoop) vanilla protein powder

4 g (1 tsp) baking powder

1 pinch salt

Preheat the oven to 350°F (175°C). Line a loaf pan with parchment paper, leaving extra hanging over the sides for easy removal.

In a large bowl, mash the bananas until mostly smooth.

Add Greek yogurt, honey (or maple syrup), eggs, and vanilla extract. Whisk until the mixture looks creamy and fully blended.
