Maple Cinnamon Sweet Potato Casserole

For the pork:
4lbs boneless pork butt/shoulder
2 carrots
3 stalks celery
1 yellow onion
4 cloves garlic
4 rosemary sprigs
1 ½ cups red wine
Chicken stock to cover
3Tbsp AP flour
Salt and pepper
Neutral oil for searing
For the potatoes:
5 large sweet potatoes
5oz @churnfoods cinnamon maples butter
Istruzioni
For the pork:
Season pork heavily with salt and pepper.
Sear pork heavily on all sides over medium/high heat.
Remove pork, add vegetables and saute for 5 minutes.
Add flour and cook 2 more minutes.
Add wine, stir while cooking over medium heat until thickened.
Add pork, rosemary, and chicken stock until just covered.
Bring to simmer. Place lid on pot and cook in oven at 325f for 2.5 hours.
For the potatoes:
Prick potatoes all over with a fork
Bake at 400f for 1 hr or until very tender
Puree potatoes, season, add butter
Construction:
Once pork is cooked, shred well
Layer pork then potatoes
Broil for 20 minutes
Brush with additional butter and finish with chives
