Skip the deli counter—this homemade deli-style roast beef is surprisingly easy to make and gives you tender, thin slices perfect for sandwiches, wraps, meal prep, or straight-from-the-fridge snacking.
The secret? Start it HOT for that seasoned crust, then turn the oven down and cook it low and slow until the center hits 130°F.

Homemade Deli-Style Roast Beef
2 ¾ lb eye of round roast
2 tbsp onion powder
2 tbsp smoked paprika
1½ tbsp smoked salt
HOW TO MAKE IT

Pat the eye of round completely dry and trim away any exterior fat.
Combine the onion powder, smoked paprika, and smoked salt. Roll and press the roast into the seasoning until well coated on all sides.
Place the roast on a rack over a baking sheet and roast at 450°F for 15 minutes.
Reduce the oven to 275°F and continue roasting for about 50 minutes, or until the center reaches 130°F. Go by internal temperature rather than time since every roast cooks a little differently.
Let it rest and cool for about 20 minutes, then refrigerate overnight.
The next day, slice it as thinly as possible against the grain and you’ve got homemade deli roast beef ready for sandwiches all week.
Food safety note: I prefer my roast beef medium-rare. For USDA food-safety guidance, cook whole beef roasts to 145°F and allow at least a 3-minute rest.
