2 Large Potatoes (peeled & grated)
Salt & Pepper
1/4 cup Potato
Starch (Optional)
Istruzioni
1. Peel and grate the potatoes.
2. Add the potato starch and mix together until well combined

2. Place the grated potato mixture in a strainer or colander set over a bowl. Press firmly to extract as much liquid as possible.
Let the liquid sit for 5-10 minutes; potato starch will settle at the bottom. Carefully pour off the clear liquid, reserving the starch. Mix the grated potato and starch together.
Heat a generous amount of oil in a nonstick skillet over medium-high heat.
Spoon the potato mixture into the hot pan, spreading it evenly to form a thin pancake. Cook for 3-5 minutes per side, or until golden brown and crispy.
