Ingredienti

For the Chicken:

1 pack chicken tenders

1 teaspoon cinnamon

½ teaspoon nutmeg

3 tablespoons soy sauce

2 tablespoons fresh lime juice

1 tablespoon olive oil

1 tablespoon fresh ginger, minced

3-4 garlic cloves, minced

2-3 scallions, chopped

½ teaspoon dried thyme

½ teaspoon black pepper

Salt to taste

For the Pineapple Salsa:

1 cup fresh pineapple, diced

1/4 red onion, diced

1/4 red bell pepper

A handful of Cilantro, chopped

1/4 jalapeños, diced

Lime juice, salt, pepper to taste

Sides:

Cooked black beans

Coconut Rice

Istruzioni

Mix all chicken marinade ingredients into a paste

Coat chicken thoroughly, let sit 30 minutes

Heat pan over medium-high, cook chicken 6 minutes per side OR put in the oven for 12 mins at 400 and broil for 2-3 after

Mix pineapple salsa ingredients together

Serve chicken over black beans and rice, top with pineapple salsa
