Mediterranean Feta, Olive & Cucumber Party Skewers with Lemo

1 English cucumber, sliced into thick half-moons

1 pint cherry tomatoes

8 ounces feta cheese, cut into cubes

24 Kalamata olives

2 tablespoons extra virgin olive oil

1 tablespoon fresh lemon juice

1 teaspoon dried oregano

1 teaspoon lemon zest

1 tablespoon chopped fresh dill

1 tablespoon chopped parsley

1/4 teaspoon cracked black pepper

Pinch of sea salt

24 small appetizer skewers or toothpicks

Istruzioni

Wash and dry the cucumber, cherry tomatoes, and fresh herbs thoroughly.

Slice the cucumber into thick half-moon pieces and cube the feta cheese evenly.

Assemble each skewer by threading one cherry tomato, one cucumber slice, one feta cube, and one Kalamata olive.

Arrange the skewers neatly on a long serving plate or platter.

In a small bowl, whisk together olive oil, lemon juice, oregano, lemon zest, black pepper, and sea salt.

Lightly drizzle the dressing over the assembled skewers.

Sprinkle fresh dill and parsley generously across the top.
