Day 8/30: Street Corn Beef Bowl

I’m actually in love, this might be my second favourite bowl yet.
For the High-Protein Street Corn:
2 cups fresh or frozen corn
1/2 cup Greek yogurt (0% or 2%)
1/4 cup cottage cheese
2 tbsp mayo
1/4 cup feta, crumbled
2 tbsp cotija, crumbled
1/4 cup cilantro, chopped
1 jalapeño, sliced thin
Pinch of salt
Squeeze of lime juice
For the Sweet Potato:
2 medium sweet potatoes, cubed
olive oil, salt, pepper, paprika and garlic powder

Prep the sweet potatoes: Cube 2 medium sweet potatoes. Toss with olive oil spray and seasoning. Roast at 425°F for 20 minutes until crispy on the edges.
Make the corn mix: Blend cottage cheese with greek yogurt, mayo and cilantro until completely smooth. Whisk together Greek yogurt, blended cottage cheese, and mayo in a bowl. Fold in 2 cups corn, feta, cotija, cilantro, jalapeño, salt, and a squeeze of lime juice.
Brown the beef: Season 12-15 oz ground beef with taco seasoning. Brown in a hot pan until cooked through, about 5-6 minutes. Drain any excess fat.
Plate it: Divide sweet potatoes between two bowls. Add about 1.25-1.5 cups cooked beef per bowl. Top with high-protein street corn mix. Add sliced avocado on the side.
