Ingredienti

1 Large Onion, diced

1 Red Bell Pepper, diced

1 Jalapeño, diced or 1 can Diced Green Chilis

2 tsp Minced Garlic

1 15oz can Black Beans, rinsed and drained

1 cup Quinoa, rinsed and drained

2 Chicken Breasts, raw

2 cups chicken/vegetable Broth

1 cup Salsa

3 tsp Cumin

1 tsp Cayenne

1 tsp Salt

Istruzioni

Preheat your Instant Pot using the Sauté function. When it reads HOT, add a bit of oil to the pot and sauté the onion, bell pepper, and jalapeño until they begin to soften.

Turn off Sauté (cancel). Add all remaining ingredients to the pot in order. Do not stir.

Cook (with MANUAL or PRESSURE COOK function) for 10 minutes (or 12 if using frozen chicken)

Quick release pressure and, shred the chicken (I shred it with a stand mixer), and serve with your favorite fixins.
