250g beef shank

2-3 tbsp cooking wine

½ onion

1½ stalks green onion

5 garlic cloves

1 bay leaf

1 anchovy stock coin

1–2 tbsp bone broth powder

Undercooked noodles (your choice)

Extra green onions for garnish

Radish kimchi (for serving)

Istruzioni

Par-boil the beef shank in water with cooking wine to remove blood and impurities, then discard that water. (5mins)

Transfer the cleaned beef into a stone pot.

Add the half onion, green onion, garlic cloves, bay leaf, and anchovy stock coin into the pot with fresh water.

Simmer for 40 minutes to 1 hour, skimming off any scum on the surface.

Once the vegetables are soft, remove them and set the beef aside.

Stir in 1 to 2 spoonfuls of bone broth powder into the broth.

Add undercooked noodles and the cooked beef back into the pot, heat until warmed through.

Garnish with chopped green onions and serve piping hot.
