Honey-Lime Chicken Enchiladas Recipe from Sarah Jane Geckler

Ingredienti

4 Tablespoons honey

3 Tablespoons lime juice

1 Tablespoon oil

2 teaspoons chili powder

¼ teaspoon garlic powder

1 large can mild green enchilada sauce

1-2 lbs. cooked, shredded chicken

Shredded cheese

Flour tortillas

Istruzioni

Mix honey, lime juice, oil, chili powder and garlic powder in a large bowl. Then add chicken, mix well. Fill tortillas with chicken mixture, add cheese and roll up. Put a layer of enchilada sauce on the bottom of a 9x13 pan. Place enchiladas in pan and cover with remaining enchilada sauce. Bake covered about 30 minutes at 350 degrees. Sprinkle cheese on top and return to oven uncovered until cheese melts. (The honey lime chicken also works on soft tacos or on a salad.) For extra flavor, or if using 2 lbs. chicken, double the sauce!
