You Need This Garlic Sauce

Ingredienti

1 whole garlic head (or ~10–12 cloves)

2 cups cherry tomatoes (≈ 300–350 g)

1 small onion

½–¾ cup olive oil (120–180 ml) (enough to cover garlic)

fresh rosemary + thyme

For the sauce:

2 tbsp mascarpone (≈ 30 g)

1 cup fresh basil (≈ 80–100 g)

3 tbsp pine nuts (≈ 25 g)

⅓ cup parmesan (≈ 30 g, finely grated)

salt & black pepper

pasta water

pasta (spaghetti / rigatoni)

Istruzioni

Preheat oven to 350°F / 180°C

Add garlic, tomatoes, and onion to a baking dish.

Pour olive oil over (garlic should be mostly covered).

Add rosemary, thyme, salt & pepper.

Roast for 35–45 min until soft, golden, and jammy.

Transfer everything to a blender:

roasted garlic, tomatoes, onion + a bit of the oil

Add mascarpone, basil, pine nuts, parmesan, salt & pepper.

Blend until smooth and creamy.

Cook pasta until al dente.

Add sauce to a pan + pasta + splash of pasta water.

Toss until glossy and silky.

Finish with parmesan & basil 🧀🌿

Tip:

don’t skip pasta water — it makes the sauce PERFECT
