Airfryer Bruschetta Chicken & Pesto Potatoes

This is the kind of easy air fryer dinner I’ll be making on repeat all Summer long… all made in one basket. Perfect for meal prep too 👌

For the chicken:
4 chicken breasts
1-2 tbsp olive oil
1 tbsp Italian seasoning
1 tsp garlic granules
Salt & pepper
For the potatoes:
1kg baby potatoes, halved.
1 tbsp olive oil
2–3 tbsp green pesto. I used @sacla_uk
1–2 tbsp parmesan
For the bruschetta topping:
Cherry tomatoes, chopped
Fresh basil
1 tbsp olive oil
2 tbsp balsamic
3 garlic cloves, grated
1–2 tbsp parmesan
Salt & pepper
Balsamic glaze, to serve (optional)
Istruzioni
Add the potatoes to a bowl with olive oil, pesto and parmesan. Mix well and air fry at 200°C for 15–20 minutes so they’ve a head start
Meanwhile, coat the chicken in olive oil, Italian seasoning, garlic granules, salt and pepper.
Add the chicken on top of the potatoes and air fry at 180°C for 17 minutes until cooked through.
While everything cooks, make the bruschetta topping by mixing together the tomatoes, basil, olive oil, balsamic, garlic, parmesan, salt and pepper.
Serve the chicken and crispy potatoes topped with the bruschetta mix and a drizzle of balsamic glaze.
