Easy Cod & Spinach Stew. a Glorious Bit of Sunshine in a Bow

Ingredienti

1 tbsp olive oil

1 red onion, finely sliced

2 garlic cloves, thinly sliced

1 tsp sweet smoked paprika

½ tsp dried oregano

2 x 400g tins chopped cherry tomatoes

150ml fish stock or water

200g fresh spinach

4 skinless cod fillets (approx. 150g each)

Zest of ½ lemon

Salt and freshly ground black pepper

Fresh parsley, chopped (to serve)

Lemon wedges (to serve)

Istruzioni

Heat olive oil in a large pan.

Sauté the sliced red onion until soft, then add the garlic, smoked paprika, and oregano.

Stir in the tinned chopped tomatoes and a splash of fish stock.

Simmer for 10–15 mins until a rich thicker sauce forms.

Add the spinach and let it wilt.

Nestle in the cod fillets gently. You are basically poaching them in this sauce, cover, and simmer gently for 7–10 mins.

Finish with lemon zest and parsley.
