Cucumber, Feta & Basil Salad with Tangy Cumin Tahini-yogurt

Crisp cucumbers, salty feta, sun-dried tomatoes, avocado, and pistachios all pulled together with a creamy tahini-yogurt dressing.
It’s fresh, rich, and hits every texture in one bite.
For the dressing:
1/4 cup tahini
1 tbsp olive oil
1 tbsp honey
2 tbsp water
1/4 cup plain Greek yogurt
3 tbsp lemon juice
Oregano
1/2 tsp salt
1/2 tsp pepper
1/2 tsp cumin
For the salad:
2 English cucumbers, shaved into ribbons
1/2 cup chopped pistachios
1 avocado, chopped
Handful of arugula
1/2 red onion, sliced
1/4 cup chopped sun dried tomatoes
1/4 cup chopped fresh basil

Make the dressing—add all ingredients to a jar and whisk or shake to combine.
Add all ingredients for the salad to a bowl, then dress and toss.
