2 cups red lentils

1 cup fine bulgur

1/4 cup olive oil

2 table spoons tomato paste

2 tablespoons paprika paste (use more tomato paste if you don’t have any)

4 cups water

2 onions

1 bunch spring onions

1 bunch parsley

1 tablespoon cumin

1 teaspoon pepper

2 teaspoons salt

Anweisungen

Cook 2 cups of lentils in 4 cups of water (in a pressure cooker, if you don’t have one, add a bit more water) for 10 minutes (longer if you don’t have a pressure cooker, until the lentils fall apart). Once the lentil is cooked, add the bulgur while the lentils are still hot, mix everything, cover and let sit until the bulgur softens (it will from the leftover water and the steam from the lentils). Blend 2 onions into a puree, mix with 1/4 cup of oil, saute for 10 minutes. Add the tomato and the paprika paste, cook everything for a few more minutes. Add cumin salt and pepper. Mix everything, knead the lentil onion mixture by hand for a few minutes. Add chopped up onions and parsley. Mix lightly. Form balls. Serve with lettuce and lemons on the side
