fish and spicy sauce

1 medium onion, finely chopped
5 garlic cloves, peeled
4 large fresh red chiles, coarsely chopped
3 tablespoons Thai fish sauce
3 tablespoons lemon or lime juice
1 tablespoon cilantro leaves, finely chopped
to serve your choice of salads, lettuce, sliced radishes, celery, carrot and cucumber

Anweisungen
Wrap the fish in foil leaving the top open and set it under a preheated broiler until thoroughly cooked through. Remove to a plate and let cool. When cool, break up the fish with your fingers to make small pieces. Discard any bones and set the flesh aside.
Wrap the onion, garlic, and chiles in foil, again leaving the top open, and set them under the broiler. Cook until they begin to soften.
Using a large mortar and pestle, pound the onion, garlic, and chiles to form a liquid paste. Stir in the fish sauce and lemon juice, then fold in the fish (see note). Spoon into a small bowl and sprinkle with cilantro. Serve surrounded by a selection of salads, crisp lettuce, radish, celery, carrot, and cucumber.

Note In Thailand, the fish would be mashed to a paste before folding into the mixture.
