Yuwi’s Oxtail Stew

- ~2 lbs of oxtail
- 1 lb carrots, roughly chopped
- 1 large onion, small dice
- 1 leek or daikon, or really whatever tough veggie, roughly chopped
- 3 cloves garlic, fine diced
- 1 28oz can of whole peeled tomatoes (or crushed)
- Parsely
- Thyme
- Hot Paprika
- 1/3 cup Beer/white wine
- Corn starch (or 3 Tbsp tomato paste)
- 4 Serrano chiles (more if you like heat)
Pokyny
(Pressure cooker version)
1. Season the oxtail with salt & pepper.
2. Heat a dash of olive oil in a cast iron pan Brown the oxtail. Remove meat and set aside.
3. In the same pan, sauté onions & garlic until translucent & fragrant.
4. Transfer the meat into the pressure cooker, add the carrots, tomatoes, salt & pepper to taste, herbs, chile, alcohol, leeks, paprika, and tomato paste. Set pressure cooker to pressure-high for 15-20 min.
5. Adjust seasoning and add corn starch as a thickener as needed. Cover and set pressure cooker to pressure-med for 5 min.
6. Serve w/ rice and garnish with chopped parsley.
