West African Peanut Chicken

2 pounds boneless, skinless chicken thighs, halved
Kosher salt and ground black pepper
neutral oil
1 14½-ounce can diced tomatoes
2 tablespoons fish sauce
1 habanero or Scotch bonnet chili OR serrano chili, halved and seeded
¼ cup creamy peanut butter
Zest and juice of 1 lemon OR 1 lime
Optional garnish: Chopped fresh parsley

Pat the chicken dry, then season with salt and pepper. Heat a thin coating of neutral oil in a large skillet. Add the chicken and cook, undisturbed, until browned. Turn and add the tomatoes, fish sauce and chili; scrape the skillet. Cover and cook until tender, about 20 minutes. Stir in the peanut butter and simmer until thickened. Season with salt and pepper. Sprinkle with lemon zest and juice.
