Anisa's Vegetarian Chili

Ingredients
Chili Base
• ½ tablespoon olive oil
• 6 cloves garlic, minced
• 1 yellow onion, chopped
• 1 large carrot, diced
• 1 red bell pepper, diced
• 1 (4 oz) can mild green chiles
• 1 large Yukon gold potato, cubed (½-inch pieces)
Spices
• Chili flakes (1–1½ teaspoons, to taste)
• 1 tablespoon cumin
• 1 teaspoon curry powder
• ¼ teaspoon garlic powder
• 1 teaspoon smoked paprika
• ½–1 teaspoon chipotle powder (or 1 chopped chipotle in adobo for deeper smoke)
• ¼ teaspoon salt
• Freshly ground black pepper
Liquids & Beans
• 1 (28 oz) can crushed tomatoes
• 5 cups vegetable stock (reduced from 6)
• 1 (15 oz) can black beans, rinsed and drained
• 1 (15 oz) can kidney beans, rinsed and drained
• 1 (15 oz) can great northern beans, rinsed and drained
• 1 (15 oz) can corn, rinsed and drained
Optional Toppings (Highly Recommended)
• Sharp cheddar or smoked gouda
• Avocado
• Cilantro
• Lime wedges
• Sour cream or Greek yogurt

Vegetarian Chili
Makes ~6–8 hearty servings
Total cook time: 1 hour
Instructions
1. Build the base:
Heat olive oil in a large pot over medium-high heat. Add garlic, onion, carrot, bell pepper, Yukon potato, and green chiles. Sauté 6–8 minutes until softened and lightly golden (this caramelization = flavor).
2. Bloom the smoke:
Add chili flakes, cumin, curry powder, garlic powder, smoked paprika, chipotle powder, salt, and pepper. Stir 30–45 seconds until deeply fragrant.
3. Thicken naturally:
Stir in crushed tomatoes and 4 cups of the vegetable stock. Add beans and corn.
4. Simmer & reduce:
Bring to a gentle boil, then reduce heat and simmer uncovered 40–50 minutes, stirring occasionally. The potatoes will break down slightly and thicken the chili naturally.
