Grandma’s Chicken & Dumplings

for the chicken base

2 lbs bone-in chicken thighs (or breasts)

1 teaspoon salt

½ teaspoon black pepper

1 small onion, chopped

2 celery stalks, chopped

2 carrots, sliced

4 cups chicken broth

2 tablespoons butter

3 tablespoons all-purpose flour

½ teaspoon thyme

for the dumplings

1½ cups all-purpose flour

2 teaspoons baking powder

½ teaspoon salt

¾ cup milk

2 tablespoons melted butter

步骤

cook the chicken

in a large pot, add chicken, broth, onion, celery, carrots, salt, pepper, and thyme. bring to a boil, then reduce heat and simmer 35–40 minutes until chicken is tender.

shred & return

remove chicken, shred or chop, then return to the pot.

thicken into gravy

in a small pan, melt butter and whisk in flour. cook 1–2 minutes until lightly golden, then stir into the pot. simmer until thick and creamy — not brothy.

mix the dumplings

in a bowl, combine flour, baking powder, and salt. stir in milk and melted butter until a soft dough forms.

drop & steam

drop spoonfuls of dough directly onto the simmering gravy. cover tightly and cook 15 minutes without lifting the lid.

rest & serve

let sit 5 minutes before serving. spoon thick chicken and fluffy dumplings into bowls and serve hot.

tips & substitutions

keep the lid closed while dumplings cook or they won’t rise properly.

want extra richness? stir in a splash of heavy cream.

prefer rolled dumplings? roll thin and slice into strips.

the thicker, the better — that’s grandma’s way.
