Creamy, tangy, and bursting with fresh Mediterranean flavor — this toast is the perfect way to start your day (or upgrade your lunch)!
Ingredients (makes 2 toasts)
For the base:
2 slices rustic or sourdough bread, toasted
1 ripe avocado
1 tsp lemon juice (or a drizzle of olive oil + vinegar)
Salt & pepper, to taste
Mediterranean toppings:
¼ cup crumbled feta cheese
6–8 cherry tomatoes, halved
A few cucumber slices (optional)
4–6 Kalamata olives, sliced
Fresh basil or oregano leaves
Drizzle of extra virgin olive oil
Pinch of chili flakes or za’atar (optional)

Toast the bread
Lightly brush your bread with olive oil and toast until golden and crisp.
Prepare the avocado base
In a bowl, mash the avocado with lemon juice, salt, and pepper.
Spread evenly over the warm toast.
Add the Mediterranean flair
Top with crumbled feta, cherry tomatoes, cucumber, and sliced olives.
Sprinkle herbs (basil, oregano, or thyme).
Finish & serve
Drizzle with olive oil, add chili flakes or za’atar for extra kick.
