Ingredients: • 1 teaspoon active dry yeast • 1 tablespoon sugar • 2 ⅓ cups room temperature water • 4 ¾ cups all-purpose flour • ½ teaspoon salt • 2 tablespoons olive oil

Instructions:

1. Mix everything except the olive oil together and let it rest for 30 minutes.

2. Add the olive oil, then rest another 30 minutes.

3. Fold the dough and rest for 30 minutes.

4. Fold again and rest for 30 minutes.

5. Fold once more and rest for 30 minutes.

6. Cut the dough and let it rest on the baking tray for 15 minutes.
