Maple Pecan Oatmeal Chocolate Chip Cookies

配料

For the maple pecans:

1/2 cup whole raw pecans

2 tbsp maple syrup

1/2 tsp vanilla extract

For the cookies:

1/2 cup vegan butter, melted

1/2 cup packed dark brown sugar

1/4 cup granulated sugar

3 tbsp unsweetened non-dairy milk

2 tsp vanilla extract

1 1/5 cup all-purpose flour, spooned and levelled

1 cup old-fashioned rolled oats

1 tbsp cornstarch

1/2 tsp baking soda

1/4 tsp salt

4 oz dark chocolate, roughly chopped

  1. Hear a skillet over medium. Toast pecans for 1-2 minutes until fragrant. Add maple syrup and vanilla, stir for 30 seconds, then transfer to a bowl. Let cool

  2. In a large bowl, whisk melted butter with brown sugar and granulated sugar until creamy. Add non-dairy milk and vanilla, whisk again

  3. Add flour, oats, cornstarch, baking soda, and salt. Fold together until a soft dough forms

  4. Roughly chop maple pecans. Fold pecans and chopped dark chocolate into the dough. Cover and refrigerate for at least 30 minutes

  5. Preheat oven to 175°C. Line a baking sheet with parchment. Scoop dough into 1.5 tbsp portions (about 8 cookies per sheet). Bake 9 minutes, until edges are golden but centres look slightly soft

  6. let cookies rest on baking sheet for 10 minutes before transferring to a cooling rack
