Raspberry Cream Humatachen

2 eggs
2/3 cup sugar
1/2 cup oil
1 tsp vanilla
2 tbsp orange juice
2 1/2 cups flour
1 tsp baking powder
Pinch of salt
Filling: Raspberry jam
Crumb topping:
1/2 cup flour
1/3 cup brown sugar
1/4 cup oil
Splash of vanilla
Icing (optional)
1 cup confectioners sugar
1/2 tbsp raspberry jam
1 tbsp milk (non dairy works)

Preheat oven to 350°F.
Whisk together eggs,sugar, oil, vanilla and orange juice.
Mix in dry ingredients until a soft dough forms. Dough should stick to itself but not to you (if it does, add some flour and work it in).
Roll out dough on generously floured parchment, so it’s 1/4” thick (make sure it’s not too thin) and cut circles.
Fill hamentaschen with no more than 1 tsp of filling.
Pinch 3 corners and form a hamentaschen.
Combine crumb topping ingredients and press gently onto formed hamentaschen. Alternatively, you can top with an egg wash and the crumb sticks better (I prefer hamentaschen without an egg wash).
Bake for 12-13 minutes.
Once cooled, prepare the glaze by combining the glaze ingredients. Drizzle over hamentaschen.
