Potato cakes

Potatoes: 23 oz

Butter : 0.5 oz

All purpose flour: 6 oz

Scallions: 4, sliced

Chives : 1 tbsp, chopped

Salt: to taste

Black pepper: to taste

Olive oil: 4 tbsp

步骤

Peel and chop the potatoes into even cubes. Cook in a large pan of salted boiling water for 15 minutes until fork tender. Drain and leave to dry. minimal_rich_text

Warm the milk and butter in a pan over a low heat. Add the potatoes to the pan and mash until smooth. Leave to cool. minimal_rich_text

Once the mash has cooled stir the all-purpose flour into the mash. Mix in the sliced scallions and chopped chives. Season with salt and black pepper. minimal_rich_text

Roll the potato mixture into 12 balls and flatten slightly. Heat the olive oil in a frying pan over a medium heat and fry the potato balls for 3 minutes on each side. Whilst cooking use a spatula to press the balls to flatten them and remove from the pan once golden. Serve hot. minimal_rich_text
