Creamy Tuscan Chicken Dump Meal

1.5 lbs chicken breasts or thighs
1 cup chopped spinach (fresh or frozen)
1 cup chopped sun-dried tomatoes (drained if packed in oil)
1/2 cup chopped onion
3 cloves garlic, minced
1 tsp Italian seasoning
1/2 tsp salt & pepper
1 cup canned coconut milk or heavy cream (freeze separately or add when cooking)
1/2 cup chicken broth
Optional: 1/4 cup shredded parmesan (skip for dairy-free)

In a large skillet or pot, sauté onions in a little oil until softened.
Add garlic, chicken, sun-dried tomatoes, seasonings, and cook until chicken is browned (doesn’t need to be fully cooked through).
Stir in chicken broth, spinach, and coconut milk (or cream).
Simmer for 10–15 minutes, until chicken is fully cooked and sauce has thickened slightly.
Let cool completely.
Portion into freezer-safe containers (glass or BPA-free plastic) with a tight seal.
🔹 Freezer & Reheat Instructions:
Freezes well for up to 3 months.
Reheat: Thaw overnight in fridge, then warm on stovetop or microwave until hot (165°F). Add extra splash of broth or cream if it thickens too much during storage.
Serve with rice, gluten-free pasta, or mashed potatoes.
Thaw overnight, then cook in crockpot on low for 6–8 hours or high for 3–4 hours. Serve over rice, mashed potatoes, or gluten-free pasta.
