Mushroom Ingudai Tibs

1 Tbsp. Neutral Cooking Oil

4 cups chopped mushrooms

1 cup thinly sliced red onion

½ tsp. dried thyme

--- For the Sauce ---

2 tsp. Berebere spice blend

2 cloves minced garlic

½ tsp. Ground cardamom

1 tsp. Paprika

1 tsp. ground coriander

¼ tsp. Onion powder

1 Good pinch each, cinnamon, clove, nutmeg

2 Tbsp. Red wine

¼ cup water

Salt, to taste

步骤

1. Add oil to a large skillet over medium heat. Once hot, add in the onion and cook until onions are softened and translucent.

2. Add the mushrooms and the Thyme. Season with a good pinch of salt and cook until the mushrooms start to turn golden on some of the edges. (If pan seems to be drying out too fast, add some splashes of water in order to reach desired color).

3. Mix in all the dried spices, the wine, and the water.

4. Mix well, cover, and cook until the mushrooms are cooked, (about 5 minutes).

5. Taste and adjust flavor.
