250 g Nabulsi cheese

Because Nabulsi is preserved in brine, it can taste very salty if fried directly. That’s why preparation is key:
Rinse the cheese: Take the block of Nabulsi cheese and rinse under cold water to remove surface brine.
Soak if needed: If the cheese is too salty, soak it in water for 1–2 hours, changing the water once or twice.
Slice into thick pieces: Cut the cheese into slices about 1 cm thick. Too thin and it may burn, too thick and it won’t cook evenly.
Heat olive oil or butter in a non-stick pan over medium heat.
Place cheese slices in the pan. Do not overcrowd — leave space between slices.
Fry for 1–2 minutes on each side until golden brown.
Remove and place on paper towel to absorb excess oil.
Serve immediately while hot and stretchy.
