Miso Glazed Eggplant (quick Recipe

2 medium eggplants

2 tbsp white or yellow miso paste

1½ tbsp soy sauce

1½ tbsp honey or maple syrup

1 tbsp rice vinegar

1 tbsp sesame oil

1 tsp grated ginger (optional)

1 clove garlic, minced

Sesame seeds & sliced green onions, for garnish

Preheat oven to 400°F (200°C). Line a baking tray with parchment paper.

Prepare eggplant: Slice eggplants in half lengthwise. Score the flesh in a criss-cross pattern (don’t cut through).

Make miso glaze: In a small bowl, whisk miso paste, soy sauce, honey, rice vinegar, sesame oil, ginger, and garlic until smooth.

Brush generously over the cut sides of the eggplant.

Roast cut-side up for 20–25 minutes, until tender and caramelized.

Garnish & serve with sesame seeds and green onions.

Serving Suggestions

Serve over steamed rice or soba noodles

Pair with grilled tofu, salmon, or teriyaki chicken

Enjoy as a warm side or light vegetarian main

Broil for 2 minutes at the end for extra caramelization
