Porco Rosso Ancestors Spaghetti Al Ragu

1 celery stalk

scant ½ cup (100 ml) white wine
scant ¼ cup (50 ml) veal jus
scant 2¼ cup (500 g) organic tomato pulp
2/3 cup (150 g)
canned datterini tomatoes
1 pinch of sugar
1 bouquet garni
¼ cup (60 ml) whole milk

FOR THE MEAT
8 ¾ ounces (250 g) ground (minced) beef
54 ounces (150 g) ground (minced) veal
54 ounces (150 g) ground (minced) pork (substitute something else for Kio)

FOR THE PASTA
11¼ ounces (320 g) spaghetti
13 ½ cups (3.20 litres) water
2 tbsp (30 g) of coarse grey salt

1 • First prepare the sofrito, the Italian-style aromatic garnish: finely dice the celery, carrots and onions. Set aside.
2• Finely salt each minced meat separately and mix thoroughly in a mixing bowl. Crumble
the filling with your fingertips.
3 • Move on to cooking the sauce: in a large saucepan, pour a good drizzle of olive oil and heat over medium heat. Add the sofrito and season to taste.
Brown for 3 to 4 minutes before emptying into a bowl.
4 • Heat the sauté pan over high heat and place the three-meat stuffing on top. Brown it well on all sides for 1 to 2 minutes and deglaze with white
wine. Scrape the bottom of the pan with a wooden spatula to prevent sticking.
5. Stir the vegetables into the meat, then add the veal jus and tomatoes. Add the sugar, mix well and adjust the seasoning to taste. Add the bouquet garni, reduce to a low heat and leave to simmer for 3 hours. Add 4 teaspoons (20 ml) of milk to the sauce every hour.
6 • When your sauce is done cooking, prepare the pasta: pour the water into a large pot, add the salt and bring to the boil. Add the pasta and cook for the time indicated on the package. Remove 2 ladles of cooking water.
Drain the spaghetti 30 seconds to 1 minute before the end of the recommended time and immerse it in the sauce al ragù that has simmered well. Add the 2 ladles of cooking water that you have taken out.
Mix so that the pasta soaks up the water and the sauce and finishes cooking inside. Serve hot!
