1 large pineapple
1 vanilla bean
½ cup (100 g) sugar
2¾ cup (700 ml) water
1 large pinch of sencha tea

1 • Prepare the "cooking liquid":
the sencha and vanilla tea syrup. Place the tea in an infuser. Bring the water to a simmer and, while off the heat, immerse the tea infuser.
2 • Cut the vanilla bean through the center with the tip of a paring knife and open it up.
With the tip of the knife, scrape vanilla beans from the pod. Put the beans in the water with the tea and add the pods.
Leave to infuse for 10 minutes.
3 • Remove the tea infuser from the water and add the sugar. Put it back on the heat until the sugar dissolves. Your tea syrup is ready.
Put it to one side.
4• Preheat oven to 356°F (180°C/gas mark 6).
Prepare and pare the pineapple: with a slicing knife and a chef's knife, slice the pineapple from the base and to the top, then peel it.
Using a peeler or apple corer, remove the core.
With the tip of your paring knife, remove the prickly parts of the fruit. Your pineapple is ready to be cooked.
5 • Place it in the center of a small casserole or baking dish and pour the tea syrup over it.
Bake for 1 hour and baste regularly. At the end, the pineapple should be melted and caramelized, the liquid well-reduced. Continue cooking in 10-minute increments if the first hour of cooking is not sufficient.
Presentation: Serve the pineapple slices to your guests on small plates. Serve it with sencha or matcha tea to complement the fruity and herbal notes. Itadakimasu!
