This Pumpkin Sheet Cake Is Everything

For the Cake

4 eggs

1½ cups white sugar

1 cup avocado oil

1 (15-oz) can pumpkin purée

2 cups all-purpose flour

2 tsp baking powder

1 tsp baking soda

1 tsp kosher or sea salt

2½ tsp pumpkin pie spice or:

1½ tsp ground cinnamon

½ tsp ground ginger

½ tsp ground cloves

For the Frosting

1 (8-oz) pkg cream cheese, room temp

½ cup butter, room temp

Dash of sea salt

1 tsp vanilla extract

4 cups powdered sugar

¾ tsp freshly grated orange zest

Juice of ½ an orange

Candy pumpkins for topping

Preheat oven to 350°F (175°C).

In a large bowl, whisk together eggs, sugar, and oil until light and fluffy. Stir in pumpkin until smooth.

Add flour, baking powder, baking soda, salt, and spices. Mix until just combined.

Spread batter evenly into a greased half-sheet pan (13x18).

Bake for about 18 minutes, or until a toothpick inserted in the center comes out clean. Let cool completely.

For the Frosting-

Beat cream cheese, butter, and salt until smooth.

Gradually add powdered sugar, mixing on low until creamy and lump-free.

Stir in vanilla, orange zest, and orange juice.

Once the cake has cooled, spread frosting evenly over the top. Add candy pumpkins if you’d like.

Slice, serve, and enjoy!
