Spicy “Vodka” Gnocchi

1 pound gnocchi
1/4 cup extra virgin olive oil
1 tablespoon fresh garlic, finely minced
2/3 cup tomato paste
1 1/3 cup heavy cream
1 to 2 teaspoons red pepper flakes, or to taste
2 teaspoons dried basil
salt and pepper, to taste
1/2 cup freshly grated parmesan, more to taste
2 tablespoons unsalted butter
1/4 cup burrata filling
fresh basil leaves

Bring a large pot of salted water to a boil. Cook the gnocchi according to the package instructions, then drain and set aside.
In a large skillet over medium heat, warm the olive oil. Add the minced garlic, stirring until it becomes fragrant and just golden.
Add the tomato paste to the skillet and cook, stirring frequently, until it deepens in color, about 2-3 minutes.
Lower the heat slightly, then pour in the heavy cream, red pepper flakes, and dried basil. Season with salt and pepper to taste. Stir everything together and let the sauce simmer until it thickens, allowing the flavors to meld.
Add the parmesan cheese and butter, stirring until the cheese melts and the sauce becomes smooth and creamy.
Gently fold in the cooked gnocchi, making sure each piece is coated in the sauce.
Add dollops of burrata filling on top for extra creaminess, then garnish with fresh basil leaves before serving. Enjoy!
