Hanukkah Potatoe Latkes

4 large golden potatoes, 2 large sweet potatoes, or ~3 cups grated zucchini
3 small white onions
3 large eggs
3 tbsp. self-rising flour or ½ cup flour + 1 tsp baking powder
2 tsp. salt (or more to taste)
1 tsp. black pepper
Neutral oil for frying, avocado,grape seed, canola.
Sour cream, applesauce, or your favorite dipping sauce
homemade applesauce:
Grate 2 honey crisp apples, add 1 tbsp. sugar and 1 tbsp. lemon juice.

Prep – Peel potatoes and onions; cut into pieces for the food processor (or grate by hand using mandolin grater).
Grate onions – Shred and squeeze out all excess liquid. Transfer to a large bowl.
Grate potatoes & zucchini – Add directly to the onions. Don’t strain the potatoes; the starch helps bind the latkes.
Mix – Add eggs, flour (or substitute), salt, and pepper. Stir until well combined.
Heat oil – Warm neutral oil in a large pan over medium-high until shimmering, keeping at a consistent medium heat.
Fry – Spoon batter into the pan, flatten gently, and fry until golden, about 4–5 minutes per side.
Drain – Transfer to a wire rack to keep crispy.
Serve – Enjoy hot with sour cream, applesauce, or your favorite dip.
