Chia Pudding, Mango

⁃ 2 ripe mangoes, peeled and diced

⁃ 1 cup milk

⁃ ½ cup plain Greek yogurt

⁃ 1/2 cup unsweetened coconut milk

⁃ 1.5 tbsp maple syrup or honey

⁃ 1 tsp vanilla extract

⁃ 1/2 cup chia seeds

⁃ 1/4 cup unsweetened shredded coconut (for garnish)

⁃ 1/4 cup chopped pistachios or almonds (optional, for crunch)

步骤

In a blender, combine mango, milk, greek yogurt, coconut milk, maple syrup, and vanilla extract for the base.

Pour the mango mixture into a bowl or jar and stir in chia seeds until well combined. Let sit for 5 minutes, then stir again to prevent clumping.

Cover and refrigerate for at least 2 hours (or overnight) until thickened.

When ready to serve, transfer chia pudding mixture into jars and top with more diced mango, shredded coconut, and nuts.
