1 bunch cavolo nero/kale

1 bag spinach

A handful of basil

½ cup cannelini beans

A handful of pistachios

A good glug of olive oil

Salt

Pasta of choice + reserved pasta water

Zest and juice of 1 lemon

Parmesan, to serve

步骤

Blanch the cavolo Nero and spinach and add to a blender with basil, cannelini beans, pistachios, olive oil and a pinch of salt until smooth.

Cook your pasta, then add the sauce to the pan, loosening with a splash of pasta water until it’s glossy and coats the pasta.

Finish with lemon zest, lemon juice and plenty of Parmesan.

So simple, so green, so good.
