1-bowl Brown Butter Pumpkin Chocolate Chip Cookies

6 tbsp of melted butter

1 egg yolk

1/4 cup of cane sugar

1/4 cup of coconut or brown sugar

1 tbsp of maple syrup

1 tsp of vanilla

1/4 cup of pumpkin puree

1 cup + 1 tbsp of all purpose flour

1/4 tsp of cinnamon

1/4 tsp baking soda

1/4 tsp of baking powder

1/4 tsp of salt

1/4 cup of dark chocolate chips

Preheat your oven to 350.

Brown 6 tbsp of melted butter and let cool for 10 minutes.

Add this to a mixing bowl, along with 1 egg yolk, 1/4 cup of cane sugar, 1/4 cup of coconut or brown sugar, 1 tbsp of maple syrup, 1 tsp of vanilla, and 1/4 cup of pumpkin puree & mix until smooth.

Then, add 1 cup + 1 tbsp of all purpose flour, 1/4 tsp of cinnamon, 1/4 tsp baking soda, 1/4 tsp of baking powder, and 1/4 tsp of salt. Mix until a dough forms.

Fold in 1/4 cup of dark chocolate chips.

Chill in the freezer for 10-15 mins.

Roll the dough into 2 tbsp sized balls and place on a parchment paper lined baking sheet.

Bake for 10-12 mins.

Top with some flaky salt and ENJOY!
