Guilt Free Banana Walnut Muffins

If we’re snowed in, we’re baking.
If we’re baking, it’s indulgent-feeling but balanced.
And if the kids can do it themselves? Even better.
This is a throw-everything-in-the-blender muffin, cozy, chocolatey, and perfect for snow-day survival.
Warm muffin + snow outside = therapy.
One-Blender Banana Walnut Chocolate-Chip Muffins (GF)
Ingredients (10–12 muffins):
2 very ripe bananas
2 cups rolled oats (certified GF)
2 eggs
⅓ cup maple syrup or honey
¼ cup oil (avocado, olive, or coconut)
1 tsp vanilla
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
¼ tsp salt
½ cup chopped walnuts
½ cup chocolate chips (fold in after blending)

Throw everything except chocolate chips into a blender
Blend until smooth
Pour batter into a bowl and fold in chocolate chips
Fill muffin liners almost to the top
Bake at 350°F for 18–22 minutes
Eat one warm.
Have another later.
Balance achieved.
