Lazy pierogi

450 g farmer’s cheese

2 eggs

100 g flour

Pinch of salt

Melted/brown butter, cinnamon & sugar for topping

In a bowl, place farmer’s cheese and mash with a fork until you have no big lumps left. Then add a pinch of salt and the two eggs, mix until combined.

Add flour to the farmer’s cheese mixture and stir until it becomes homogenous. If the dough holds its shape but is still a bit sticky, that’s when you know it is ready. If not, add a bit more flour until you get your desired consistency. Don’t be shy to use your hands!

Next, sprinkle flour on your bench plus your hands and divide the dough in 4 parts. Place one part directly on the floured surface, roll the dough until you create a medium sized log. Next, using a knife, cut small diamond/square shaped pieces. If the process gets too sticky, use more flour. repeat this process with the remaining dough.

Bring a large pot with water to a boil and add a pinch of salt. Lower your stove setting for the water to simmer. Cook a few pieces at a time for around 2-4 min or until they float to the surface. Occasionally stir the pot (carefully) in order for the pierogi not to stick to the bottom. Once cooked, place them on a plate. If cooked to long, they will fall apart.

In another pan, melt some butter or make brown butter. Generously pour the butter on the pierogi and sprinkle cinnamon and sugar to taste. Enjoy while the pierogi leniwe are still warm.

If you don’t manage to eat them all at once, cover the cooked pierogi and let them sit overnight in the fridge. Once you decide to eat the leniwe again, fry them on both sides in a pan with some butter, until crispy and golden brown. Sprinkle with sugar and cinnamon on top.

The toppings are really up to you! Yogurt, vanilla sauce, fruit compotes, you name it. Another common way to eat pierogi leniwe is with buttery fried breadcrumbs.
