Sweet Potato Boats with Chickpea-date Relish!

For the sweet potatoes:
3 medium sweet potatoes, halved lengthwise
Olive oil
Salt
For the relish:
1 15-oz can chickpeas, rinsed and drained
1/2 cup chopped dates
1 1/2 cups chopped arugula
1/3 cup finely chopped red onion
1 tbsp lemon zest
Juice from one lemon
1/2 tsp salt
1/4 tsp pepper
3 tbsp olive oil
For the tahini:
3 tbsp tahini
1 tbsp lemon juice
1 tbsp maple syrup
1/4 tap salt
1/4 tsp cumin
Pinch black pepper
Water to thin

Preheat the oven to 425. 2️⃣Drizzle olive oil on the bottom of a sheet pan, season with salt and place the sweet potatoes face down. Drizzle the tops with the oil and season the tops with salt. Place in the oven for about 22-24 minutes, then flip and roast for another 10-13 minutes, until fork tender. 3️⃣While the sweet potatoes roast, first make the relish. Add the chickpeas, dates, arugula, lemon zest, lemon juice, salt, pepper and olive oil to a small bowl and mix to combine. Set aside. 4️⃣Next, make the tahini. Add the tahini, lemon juice, maple syrup, salt, cumin and pepper to a small bowl. Mix until smooth. Add water to thin if needed, 1/2 tablespoon at a time until you reach desired consistency. 5️⃣Plate the sweet potatoes, then use a fork to gently mash the center of each. Add a few spoonfuls of the relish, then drizzle with the tahini sauce.
