2lb of oxtail*
2 cups of chopped pumpkin
1/2 medium yellow onion
2-3oz fresh mixed mushrooms
2 tbsp goji berries
8 jujube dates
8 small dried shiitake mushrooms
1/2 cup dried cordyceps
Herbal blend: Ginseng 10g, Maca 10g, Polygonatum sibiricum 15g, Goji berry 15g, Mulberry 10g, Jujube date 8pc
sea salt and black pepper, to taste
*If you are vegan, I recommend you use an assortment of firm tofu, fresh mixed mushrooms, 2-3 types of root vegetables, and seaweed.

Blanch the oxtail in boiling water for 2-3 minutes.
Rinse all dried ingredients and let them soak for at least 10-15 minutes.
Chop pumpkin, onion, and fresh mushrooms into big chunks.
In a clean pot, add all ingredients except for the tonic bag, salt, and black pepper. Add water to cover.
Bring contents to a boil and then simmer for 3-4 hours. For the last hour of cooking, add the herbs. *Option: put them in a tea bag, so you don't have to strain them out.
Season right before serving with salt and pepper. Discard the herbal bag.
