German Potato Salad

4-5 lbs. Potatoes
1 lb. bacon
4 medium onions
3 tbs. flour or corn starch
1 cup vinegar
1 cup water
1 1/2 cup sugar
1 tsp. salt
½ tsp. garlic powder
½ tsp pepper

6-8 hard boiled eggs

5-6 slices of bacon
2 medium onions
1 tbs. flour or cornstarch
½ cup vinegar
½ cup water
½ cup sugar salt, pepper to taste ¼ tsp garlic powder parsley
3 hard boiled eggs

Boil potatoes with jackets until slightly under done (approx. 30 minutes), drain and let cool. Fry bacon in a large fry pan. Remove bacon. Retain about ½ of the bacon grease.
Slice onions (top to bottom) and fry over a low heat in bacon grease until transparent and slightly caramelized. Remove onions from grease. Add flour and still in well over a medium high heat. Add vinegar and water, boil until thick and smooth. Add sugar and mix in well for about 10 minutes. Slice potatoes (remove skins if Uncle Ed is to indulge) and put in a large bowl. Pour in gravy, onions, broken up bacon, salt, pepper, garlic powder, cut up hard boiled eggs (save 2 to slice thin for garnish) and mix. Garnish with two sliced eggs & parsley. Serve warm (heat in oven or crock pot).
